
Tamales
La Tamalera is a new establishment that offers a Mexican and Guatemalan specialty: Tamales, which is basically corn that is pounded down and made into a dough and wrapped around a meat filling. It is a beloved dish for Cubans, and of course Guatemalans and Mexicans.
How should it be prepared?
According to the most traditional recipe, corn is ground while the kernels are rinsed in a pot of water, this way they can be crushed properly to release all the juice and later be discarded. The ground corn is then added, and in a larger pot, butter is heated with pork until golden, and the mixture is sprayed with bitter orange. The meat is then separated and strained, and then fry tomatoes, onions, chili sauce, and garlic cloves in the butter. When it is all ready, add the corn and pork, and cook together on high heat, stirring the mixture. Lower the heat, season with salt and pepper, and continue to stir with a wooden spoon, until mixture is thoroughly settled.
I am not sure if La Tamalera follows this recipe, and if they use these ingredients, but the tamale they make is delicious nonetheless. The prices for some dishes are as follows: a simple tamale is $5 CUP; with meat, salad and breaded chicken, $15; the same dish but with Pan chicken is $20. The chicken cordon bleu is the same price, and the grilled chicken is $15. There is also pork of all kinds, as well as shrimp, between $15-25.
The restaurant is small, air conditioned, with few tables, and has a pleasant bar that sells soda and Cuban beer (all between $10-24).
